Mary-Anns Fresh Food

 | Try these dishes on some of your nicest friends. All recipes have been provided by Mary-Ann Shearer. You could visit her website over here. | Belinda’s Pea Soup 1 kg split peas 2-3 litres filtered water 6 potatoes - cubed 1 celery root or 3 sticks celery - finely sliced 1 leek - finely sliced 2 carrots - finely chopped 1-2 Tbsp. Mary-Ann’s vegetable stock powder 1 Tbsp. curry powder Mary-Ann's herb salt to taste Cook all the above ingredients for 1 - 2 hours, and serve. (Do not blend) Chickpea, Cabbage, Avocado and sun dried tomato salad. 3-4 cups shredded cabbage 3 Ripe Avocado, diced 2 Red Peppers chopped 1-2 tins chickpeas, drained or 1-2 cups cooked chickpeas 1/2 cup sun dried or 2-3 fresh tomatoes died 1/2 cup olives, pitted and sliced 2-3 Tbs. Cold pressed olive oil Juice of 1 lemon 1 tsp. Mary-Ann's Garlic & Herb salt Combine all ingredients in a bowl, gentle, so as not to mash the Avocado. If the Avos are very ripe, add them last. Serve with Main course or as light, but nutritious lunch with Rye bread. Cashew Custard with acid fruit salad Dice the following, 1 Pineapple, 3 apples, 3 naartjies, 3 Kiwi fruit, 2 pears And top with cashew custard.
Cashew Custard 2 cups cashews 1 small pineapple 1 cup fresh orange/apple juice Blend the cashews until a fine past/powder is formed. Add the pineapple, blend until smooth and then dilute with juice. Serve as dip or custard.
